Delicious Grain-Free Sushi Recipe for Vegetarian + Paleo Diets

Craving sushi but don’t eat rice or fish? That doesn’t mean you have to hop off the sushi boat!
 
This is our favorite recipe for the easiest cauliflower rice sushi in town. Whether you don’t eat rice, want to skip the fish, or just want a different, healthier spin on sushi, look no further. This recipe is quick and easy to make, and doesn’t require squeezing out excess water with a cheesecloth.
 
You can even make the sushi rice ahead for a quick n’ easy dinner that will surely impress sushi lovers, veggie fans and paleo peeps alike.
 

This recipe makes 4 rolls, and you can customize them with your choice of veggies.

 
 

Ingredients + Tools:

Instructions:

  1. Cut the cauliflower head (not stem) into small pieces and steam for 6 minutes
  2. Place all of the cauliflower pieces into a food processor and pulse several times until the cauliflower is in small, rice-sized pieces. Do not over-process the cauliflower or it will turn mushy. You want the cauliflower to have a crumbly texture
  3. Transfer the cauliflower rice to a large gloss or wooden bowl and fluff with a fork, separating the “rice.” Add in the rice vinegar and Lakanto classic sweetener and allow to cool for 15-20 minutes
  4. Cover your bamboo sushi rolling mat with plastic wrap to prevent sticking. Lay down a sheet of nori, shiny side down
  5. Add ½ cup cauliflower ‘rice’ to the edge of the nori sheet. Spread it out, leaving about 1 inch on the top with no rice. Press the rice down firmly
  6. Add the vegetables to the middle of the roll
  7. Slightly wet the 1 inch edge of the nori sheet that is farthest from you with damp fingers. Pick up the edge closest to you and tightly but gently roll away from you, letting the wet nori edge stick to the roll. Let it sit for 1-2 minutes to “stick”
  8. Use a wet, sharp knife to slice into pieces. Enjoy!

    Sushi can fit into any dietary need when we make small adjustments, like substituting cauliflower rice for the traditional white rice and swap fish for veggies.
